Sunday Mornings, Plus RECIPE: GF Waffles

Sunday Mornings, Plus RECIPE: GF Waffles. Is there anything better than a Sunday morning? I don’t think that there is. You get to sleep in. In my case, that means snuggling in bed with my honey. The weekends when I have my kids we make chocolate chip pancakes for them and eggs and spinach for Andrew and I. The weekends when my kids are with their father (sad face) we tend to be more adventurous with our meals. I am forever trying new recipes. Our latest favorite is trying different flavors of protein waffles with a yummy mix of toppings and or syrups. What is your Sunday morning routine?

Andrew likes a lot of Blueberries and 1 to 2 tablespoons of Maple syrup.

I like half with blueberries and maples syrup and half with Almond butter and shredded coconut. I forgot to take a photo with the coconut added.

Here is the basic recipe:

GF Protein Waffles

Serving size-1 waffle

1/4 cup Egg Whites

1/2 Mashed Banana

1T Cinnamon

1 Scoop of Vanilla Protein Powder

1T Almond Milk

Pre-heat your waffle maker.

Mash the banana in a medium bowl.

Stir in egg whites, almond milk, and cinnamon. Add protein powder and continue to stir until well mixed.

Spray waffle maker with your choice of oil spray.

Pour mixture into waffle maker.

Close lid and allow to cook until done.

Makes-1 waffle

Top with your favorite toppings.

Topping ideas

Maple syrup

Agave syrup

Peanut or almond butter

Natural jam

I will post variations of waffle batter also. Please share your ideas for any other toppings or mix-ins for the batter that you can think of in comments below.

Also what did you do this past weekend? Anything exciting that you want to share? I would love to hear about it.

    1. Hello Rosemond! I haven’t tried this for my protein waffle recipe. For other recipes, I have used 1T of ground flax seed (I ordered this from amazon-Whole foods has it too) mixed with 2T water. Let that sit for 2 minutes-then use as a substitute for each egg. For this recipe I would try 4T of ground flax seed+ 8T water. Let me know if it works for you.
